Isolated Yeast (Tree House): How to Identify and Characterize?

If I remember correctly, Alter Ego is (or at least was) the same kettle hops as Julius, with different hops cold side. Obviously mostly Mosaic.

Isolated Yeast (Tree House): How to Identify and Characterize?

I read that description as confirmed. It’s not confirmed if it’s all American hops, but it almost certainly is. It’s definitely heavy Amarillo, most likely some Citra, and probably a kiss of Columbus, maybe even a pinch of Cascade.

Isolated Yeast (Tree House): How to Identify and Characterize?

Awhile back in this thread we discussed which hops are used in which beers. In the description for their 10th anniversary Haze, they confirmed Amarillo. I think most of us knew this was a heavy Amarillo beer, but this confirms it.

I started watching the video but haven’t had a chance to make it all the way through yet. In your screen shot it has the beer name as a YouTube recipe, which would make me think it’s a mockup specifically for the video, so not sure how much weight I’d put into it. That being said, I recall...

Amazon. It’s Borosilicate. Not familiar with true Borosilicate - are there different levels?

If you’re building a lot of starters for DIPAs, or other big beers, I highly recommend this. I thought it was overkill, but after getting in trouble with the wife about 1000 times for messy overflows, I decided to give this a shot. So much easier than the 2000.

You can definitely taste the crystal in the majority of their beers. No surprise there, but very surprised Haze and Julius were Simcoe heavy. I don’t get that at all. Like Nate, I also find it ridiculous on Facebook all these beer connoisseurs calling any ipa with crystal malt oxidized...

My process aligns with Fidens, or I guess I should say my process is close but will be shifting to their numbers on current / next batch. I was aiming for 5.3-5.4 in the Mash but that’s not the first time I’ve heard going lower for this style. I use lactic in the kettle, phosphoric in the FV...

It’s on my to-do list to listen to but haven’t had the chance yet. Thanks for the summary. I still find it surprising that the % of oats isn’t higher for Fidens. That being said their beer is not nearly as thick as it once was, and has gotten significantly better. I’ve always thought their...

Isolated Yeast (Tree House): How to Identify and Characterize?

IMO a good % of the TH beers I drink are considerably better at 1M, and sometimes better at 2M. That typically does not include the Citra heavy beers like the Julius series. But I will admit, any NEIPA in my fridge that’s older than 2M will get used in my Big Green Egg rather than consumed, so...

I’d be surprised if Julius has Apollo. It’s obviously a Citra heavy beer, and at one time had two other American hops. Amarillo seems very likely. My wild guess is that they use a tiny addition of US grown Magnum.

I really like Columbus but 30% feels really high in the DH for this style. Good Columbus can overwhelm other hops pretty quickly

This picture makes me thirsty. Am I the only one that thinks Riwaka tastes likes chaincase oil? Enigma is great, but I only use it in small %. I used it once as the main DH and holy crap, it was strong. And it sticks around forever.

I typically brew DIPAs and wouldn’t consider going less than this with 6G in the FV. That’s under 5lbs/barrel, correct? Are people still using much less in the DH than this?

Congress St was unbelievably good back in the day. I gave up on Trillium years ago. I thought they were the best for awhile. Other Half did Congress St for a freaky Friday and it was amazing. Sad that someone else makes your beer better than you do.

I believe this was said awhile ago, and in a time when he was vocal about brewing every batch himself.

Quality has definitely gone down. Once in awhile they’ll put out a beer that is astonishingly good, and it’s a reminder of what their beer tasted like years ago. IMO when they put out a good batch it’s better than anything else on the market. By far. Unfortunately most of the time it’s missing...

Good advice. I was thinking the same thing when I saw the question.
