    Hoppy Golden Strong Ale

    I'd go with wlp090 for a fairly neutral "American" version of a golden strong. You can probably get close to 90% attenuation with that grist and a simple step mash. As mentioned above, pitch a big active starter or oxygenate with pure oxygen.

    The Stone IPA of 2024 is quite a bit different than 2008. From the Stone website, the hops are now As far body, the Stone house yeast isn't quite wlp002 or wlp007.     It was quite awhile ago - I was in Aoyama. There was a tiny shop in Shibuya that sold dry malt extract and a few hops. I can't remember the name or find it - I wouldn't be surprised if it was gone. I also ordered from Sakeland. It looks like hops are a lot less expensive than they used to be...

    I lived in central Tokyo for a few years and brewed there. I only did extract but never had any trouble getting supplies. The water is fine with the exception that there is usually a lot of chlorine in it. Campden tablets were a necessity.

    It all looks like yeast to me. I am curious why it's only on that thin section of the coil. Was it not all in contact with the beer?

    I brewed a double ipa today. Columbus, Chinook, Centennial. Pitched wlp002 and it’s starting to bubble 6 hours later.

    The folks at my local store are great- always helpful and responsive. They also offer an aha discount so I take that and then tip the same amount.

    A “pretend it’s 1999” hb pale ale. It could be better. Fresh us-05 is never as good as a repitch.

    I've also been having trouble finding enough consecutive hours to do an all grain brew day. Extract can make some good beers though. Today I kegged a light dme (and a little sugar) + vista hops + K97 pale that's been in the fermenter for 3 weeks. Sample tasted great! I also swapped my beverage...
