    Fruit Beer Requiem Raspberry

    Honestly, everyone raves about the raspberry puree from Oregon but I wasn't that pleased. I found it didn't have the acidic edge that the beer needs. I get this from the whole fruit but not from the puree. It's almost like the puree is a little too rounded in flavor. I need it to be sharper.

    I just racked this beer ontop of a 3 lbs can on Oregon Raspberry Puree. I've always done this with whole frozen fruit but I figured it was time I tried the puree. I'll post when results are in.

    I dry hop it in the secondary for 7 days then condition for a month.

    Went through music school and got a masters in bass performance. I played professionally for a handful of years. Now I teach music at a middle school and play 2-3 gigs a week with mostly jazz groups and the symphony.

    I'm not sure that there's a style that I wouldn't oak really. I have had great experiences with oaking a saison, barleywine, pale ale, IPA, and american brown. It all depends on the recipe and the intention. I even think that you could oak an american light lager and it would be nice. Given...
