Successfully stabilized and back sweetened to 1.015. Added lq finings today. Hopefully bottle in a week or two. This tastes amazing! Lower abv and a little sweetness really made this mead pop!
Ok so update, the d47 is amazing, the ec1118 though seems to have lost some of the more delicate flavors. I'm going to fine and bottle the d47 as is, and stabilize and rack the ec1118 on to 2.5 lbs blueberries...
So I snuck a taste of the D47 out of secondary yesterday, it's absolutely amazing! It could be the best tasting mead I've made to date. I get that everyone's tastes are different, but I don't get all the negativity around this amazing honey...
I used to think like this, but it's a fantasy. With proper hydration and nutrient additions you can "push" any of the yeast strains I've used well past their supposed alcohol tolerance... I've had montrachet and D47 both with a tolerance around 14% go well above 17-18%. Even with cold crashing...
I know a staggered additon of nutrients is the best way to go, I just got busy and lazy and just did one addition And from listening to a podcast with Steve Piatz he said he usually only does one nutrient addition so I think I'm safe lol
Yes it is under an airlock or blowoff tube in the primary. I stir for the first few days to degass and add a little oxygen. Stop stirring between 1/2 & 1/3 sugar break...
