    Secondary Fermentation

I see many recipes that call for a second fermentation. Are we really fermenting in the second one or is more of a "racking". Maybe to let the beer mellow off the yeast for a bit? I did a quad where that might have been helpful to get it off a lot of the excess sludge

Can't lager, want to make Oktoberfest

That is way too much work for me. I would rather wait until its cold out and lager ferment outside or in my garage.

    Genny cream ale

Good point. Thank you! I guess I will still do the 60 but since I will dramatically reduce the amount of sugar in the initial boil, chances of carmelizing will reduce enough. I appreciate the help.

    Genny cream ale

Yeah not sure what I used to be honest. So round two I will definitely only boil 1/3 add the rest when the boil is done, to avoid carmelization. Can I get away with an initial 30 min boil?

    Genny cream ale

Okay good so as I had though boil 1/3 in the beginning, and then add the rest keep it above 160 for the above mentioned reasons. Can I do a 30 minute boil initially to avoid any carmelization at all or very minimal?

Is...

Can't lager, want to make Oktoberfest

I received an Oktoberfest all extract kit, but I just do not have the ability to lager so I was thinking here are some options. 1. Use ale yeast as a substitute. 2. Lager it after I bottle in the fridge. 3. Wait and do this in the fall or winter, when I guess it is cold enough where I can lager...

Isn't also they key to this to not over boil? you don't want to carmelize that sugar. Somebody has suggested only boiling some of the DME in the beginning and adding the rest at the very end so it does not brown.

Should I repitch? Pitched Yeast (Wyeast 1028) over 24 hours ago and there is no active fermentation.

Thanks, funny thing, I did watch this guy on youtube about this and he said check your bucket make sure its sealed, as the CO2 can go out through a leak duh. Well when I did that and pressed down on the top of the lid in doing so, the airlock did bubble up, so there is hope. I guess just being...
