How much would wlp500 or wy 1214 change the recipe. I don't feel like using 530 anymore, had to dump a batch of this that stalled at 1.040.

I think the rule of thumb is two clean and after is a risk. I'd try a saison or trippel next.

You can do 10g with a Grainfather. Here's one I did. I just had to add a gallon to each fermentor at the end of the boil. And it can only be 4.5-5% beer unless you want to add extract, which I didn't. Limited options, but doable.
