    Introduction?

Hey everyone. I’ve been out of the hobby for several years now, and subsequently absent on this forum. but I just began getting things together for my next brew day. Figured I’d stop here first for a reintroduction. 👍🏻

    maybe bottle now, pasturize tomorrow?

So I have always made dry, still ciders. That's what actually got me into brewing beer. I went to pull a sample of the cider I have going for my wife. She never liked what I made but a local company has released a live cider that she loves. Its similar to Angry Orchard. The reading came...

first brew day in a few years

It went fairly well. I missed OG by a couple points (target was 1.047-1.052, and I ended up with a 1.045) but nothing I'm going to stress about. I think I pitched yeast a little too soon too. The wort was about 82 degrees but I'm not sure. Does anyone else have problems with their...

    New again.

After a few years off and out of homebrewing, I'm happy to say I'm back. Brew day is tomorrow. A partial mash Irish red. Can't wait!

Anyone notice any changes to Anchor Steam?

I know they were sold a few months ago, and the new owners goals were to expand their production and reach more areas. I got a bottle at a restaurant yesterday and was completely disapointed. It tasted more malty than usual, and it didn't seem like Northern Brewer hops were used, but I'm not...

    Hey, Revvy's right

I opened a dunkle weizen after 10 days in the bottle. Usually after 10 days 12oz bottles are already carbed up from my experience, but the 1 liter swingtops that the dunkle was is was just starting to show signs of carbonation. I am glad I tasted it, but I think it will be much better in about a...

Not sure if I am venting or looking for advice...

Okay, here's the dihlema. My Little brother is going to be out in about 4 weeks after yet another 18 month vacation Iraq. He has heard a lot of positive reviews about the beer I have been making for the past year, and made a request for a kristall weiss. I have no problem making one, but I just...

    Oh...There's my whisk!

Well, I can't post a picture, but earlier today, I was making an AG batch of a Blonde Ale I have made a few times. I searched all over for my big wisk and couldn't find it anywhere. Anyways, I pitched yeast into that batch at about 3 today, then went to put a batch of Irish Red into keg...

    Okay, What would you do?

I just racked to keg with a steam clone I made a few weeks ago. I am getting ready to make another one. The beer was obviously flat, but no off flavors and pretty tasty. Should I use the smack pack and underpitch (as I have recently learned) or just get a scoopfull of the yeast on the bottom...

please clarify some contradiction regarding finings

After searching the archives, I have found that I should wait anywhere from 2 days to 2 weeks for the gelatin to do its job. I added finings to the corny keg two days ago, It has been kept in the kegerator for a few weeks, so it has been cold the whole time. I have been without homebrew for...

Okay, so I took a critical look at my sanitation. A "what not to do" story.

And I must say, I am impressed... I started at 5 pm. Started the strike water and mashed at 152 for about one hour, everything looks good. 7:30 pm (ish), Batch sparged with 180 degree water. (time for dinner) Got the wort on the burner at about 9:30. So far everything is going smooth...

I know people have added gelatin to corny's, BUT...

is the gelatin coagulating on the bottom going to clog the pickup line or faucet? I have read that some people trim the end of thier pickup tube to keep it above the yeast and other sludge on the bottom of the keg, but at the moment it is submerged in 5 gallons of beer. The problem I am...

    infected bucket a complete loss?

It appears as though one of my buckets is infected. I did a search on the forum, but didn't find what I was looking for. Is the bucket a loss, relegated to storage and mixing sanitizer, or can it actually be used to ferment again? I have some grain coming in on either saturday or monday and...

White labs WLP810 for a steam clone

Just out of curiosity, has anyone tried this yeast at higher temperatures (like around 72 degrees or so)? if so, how did it turn out? I think I can hit the 65 degree recommended temp, but I am curious how ale temps would work out since Anchor steam really isn't lagered anyway.

My first bad batch, and it's BAD

so I made a partial mash wheat beer just before chistmas. I had some friends coming up so I pulled it out after only a week in primary (airlock was done bubbling, and that has been typical of my other batches.) Normally, I keep at least two weeks in primary, but I didn't want to run out of beer...

    I'm here.

Hello all. My name is Josh, and I have been snooping around for a short time. I will make it fairly quick because my timer is about to go off, then its time to chill the wort and you know all the rest. There it is, gotta go!
