We're putting this recipe on our brew schedule but it seems that Amarillo is in short supply and out of stock at most distributors. As an alternative, we're planning on using Cascade and Ahtanum. Any comments?

After additional research, I've contacted the LHBS and they will replace the yeast pack with one that was manufactured in November. Still planing to go ahead and make a 2 step starter.

Oh well, Ranco is being delivered today. Did not get the pre-wired one. From what I've read, if you set the differential properly, and correctly mount the probe, you won't have an issue with short cycles. Freezer is going in the basement.
