Belgian Dark Strong Ale Leffe Radieuse Clone

well, the batch I made back in february is still sitting in a carboy, discovered it has a bio-film of some sort on it today so I pulled a sample- tastes great. wonder what's growing on it.

This is what mine looks like after two years! Worth saving.

Belgian Dark Strong Ale Leffe Radieuse Clone

what a great beer! reminds me I have one in my cellar from two years ago. the airlock blew at 4am a couple weeks before my two year old was born. still finding dried yeast from that blowout. that sucker continued to bubble and expel crap from the blowoff for weeks! I'm going to make it again...

Belgian Dark Strong Ale Leffe Radieuse Clone

I've never had the Raddieuse before, the local bottle shop only has the blond and a brown...but last night I had a Kwak for the first time and I was very surprised how similar it tasted to this recipe. I have two swing-top quarts of this and a couple 22s left, it's making me anxious!

I never did report back on this brew (with the yeastie blowout) but it turned out fantastic! It's a big hit. Thanks for the recipe. I'll update with a photo later.

Belgian Dark Strong Ale Leffe Radieuse Clone

Hrm, good to know; I figured it would improve with some longer conditioning, but if the improvement is merely marginal after 6 months I might go ahead and bottle it earlier! cheers

Uggh that sucks! Does it have something growing on it? Picture? I'm going to leave mine in the secondary for another 3 weeks- I'll probably put it in the garage in one week, where the temperature is about 45 f. (think roughly 7* C)

Belgian Dark Strong Ale Leffe Radieuse Clone

Day 14- I replaced the blowoff tube with an airlock yesterday, the bubbling has slowed to once every 7 seconds. the Krausen still looks pretty beefy. edit: Day 18 racked to a secondary and took a sample- FG 1.009 Tastes good, is the right color.

    Kwak Beer

I'm not sure that I understand the recipe- you mash with 8.4 gallons of water, then drain the MT add 5.2 gallons for 45 minutes at 170 then use another 3.2 gallons? 16.8 gallons total water used before boil seems a lot! Also, 3 packs of Wyeast seems like overkill is it necessary? Congrats on...

Belgian Dark Strong Ale Leffe Radieuse Clone

Yeah, as of this morning (day 11) the blow-off hose was bubbling away...krausen intact. Geez this yeast is something else!

Belgian Dark Strong Ale Leffe Radieuse Clone

Yes, it is! It's the first time I've blown an airlock on my 6.5 gallon glass primary- bad combination of high volume and a crazy voracious yeast...oh well I got the opportunity to rig my first blowoff (at 4am) and it works pretty well. Rigging might be an exaggeration- my siphon hose fit nicely...

Belgian Dark Strong Ale Leffe Radieuse Clone

I brewed this recipe Sunday (two days ago), except I added another ounce of hallertauer and used turbinado instead of belgian candy sugar. I was a little confused about the volumes- mash with 17 quarts for roughly 13 lbs of grain, and sparge with another 17 quarts was a bit more than I'm used...

Saturday is brew day! Making a Stout

I've been drinking this for a week it's delicious. I left it in a secondary for about six weeks.

    Beer Alchemy vs iBrewmaster

Yeah, I have to say that I loved it, when I could use it. And customer service was prompt with several responses. They even provided me a new serial number, and told me that the "next" button would stay gray unless a valid serial number/user name is entered. No dice; apparently they gave up on...

    Samoa Stout

mmm coconut sounds good, anyone think you could get the flavor by putting it in the last couple minutes of the boil?

    Beer Alchemy vs iBrewmaster

I'm pretty much locked out of beer alchemy now, and can't access my recipes. it's Version 1.8.23 (1.8.23)...customer service so far has been fruitless- I've entered my serial numbers several times in the past after repeatedly receiving "free trial expired" pop-ups (much to my annoyance) but now...

    Fruit Beer Blackberry hefeweizen

It was ruined- don't know what happened. I went to rack it off the berries and took a gravity sample which I tasted. It induced vomiting, immediately. Think I must have allowed a stray yeast in there or something- it was the same issue present when I first racked it.

    Fruit Beer Blackberry hefeweizen

Mines a rose-purple, and smells decent out of the airlock...the sample I took for a gravity reading tasted bad but I'm going to assume that's bc it was the first squirt out of the rack and was mostly trubbish.
