Critique my new years mead recipe, please

Im not sure if it was clear, as I just noticed I titled it 'new years' rather than 'Leap Year'. D'oh! Fixed now. ETA: Err, I thought. How can I edit the thread title? I was planning to take it to the middle range, as I've heard that can give some marshmallow flavors. Any tips on that? Such...

Critique my new years mead recipe, please

Edit: This should be titled 'Leap Years Mead', not sure how I messed that up. I'm planning to do a Bochet style Mead with stepped additions of honey to try to get the ABV as high as I can. :tank: Tentative recipe will be based on this, with a change to starting with 2.5# per gallon. I'll start...

    Homebrew Supply Websites

Did Austin Homebrew recently stop offering their $7.99 shipping option. I have an order worth about $60 in the cart, but they want $17 for the the cheapest shipping!

    American IPA Stone Ruination Clone

I brewed this about a week ago with starter of WLP001. Cold break didn't settle out very well, so there is a lot of break material in the carboy. Fermentation took off like crazy for the first few days, and it was the first beer I've had to use a blowoff tube. I just checked the gravity on...

Sour Cherry Wheat (Fast and Fake Kriek)

Thanks. I had done a bit more reading, and that technique seems to be pretty common for adding the sour mash. I'll update when I brew this:mug: ETA: thanks for the reminder on batch sparging. thats what I do anyways, but the reminder doesn't hurt.

Sour Cherry Wheat (Fast and Fake Kriek)

Im thinking about doing this next and it will be my first sour. I want to make sure I have everything straight. 1. The grain you have listed under "Grist" is for the brew day mash? So I would need 3# more for the sour mash? Total of 12.75#? 2. When do I add the sour mash to the rest of...

    Weissbier Honey Orange Hefeweizen

I brewed this on the 9th, and it is still bubbling away in the primary - 1 bubble every 10 seconds or so. I haven't taken a gravity sample since pitching. Should I rack it into the keg now or wait for it to stop bubbling? OP says primary for 7 days, its been 8 so far for me. Smells...

    Chest Freezer Specs and Layouts

Does anyone have info on the Idylis 7.0 (here)? I would like to put 3 ball locks and a 20# CO2 tank in it, but I can't find the interior dimensions to see if it would need a collar. Any help would be appreciated.

    First All Grain

Thanks, I'll probably go ahead and add that extra top-off. More beer is always good, right :)

    First All Grain

Great, thank you. Is the high gravity going to affect the final beer, other than more alcohol? Might it finish above the desired fg? Should I boil some water, cool it, and add it to the carboy to compensate? How much water? It's in a 6.5 gal carboy, so lots of room. Or just leave it alone?

    First All Grain

Hi all, first post here and questions about my first All Grain brew. I just got done brewing my first all grain (https://www.homebrewtalk.com/f70/honey-orange-hefeweizen-169857/) and I have a question about gravity changes during boil. After taking the pre-boil gravity reading, I saw it...
