    Skyrim and Mead

Hmm, sounds good. I was trying to remember if any "hints" had been dropped in-game regarding ingredients.

    Is a secondary really necessary?

Quite the ruckus :D I usually just leave my "normal" gravity beers in the primary the entire time. Beers that are getting dry hopped, have fruit additions, are getting bulk aged, etc go into a secondary. However, I have also put "normal" beers in a secondary for clearing purposes too, or...

Back from a long break, last beer has been in the primary 10+ months...

Thread necro, but since I thought this was an interesting topic (as it seems like I had actually experienced the "autolysis boogeyman,") I figured I would post it up. Anyways, I did bottle this dopplebock, and tried a bottle every once in a while. I still didn't like the flavor. Fast...

Brew Year Resolution - 2012 Brewing Goals

First off...get back to brewing! I didn't brew much at all this past year, mostly because of some unpleasant life changes I was dealing with, and the beers I did produce were sub-par because they got neglected and sat around for way too long before bottling. My most recent two beers, the hefe...

    So who's brewing this weekend?

I'm planning a new batch of cider today, and my 2011 edition holiday (cookie) ale tomorrow. Kinda late for the holidays, but better late than never!

We tried 48 year old beer today.

Interesting! I second the idea of making a reproduction if the yeast can be cultured.

    Welch's Grape Juice Wine

Hello all- I've been away (from this forum, and from brewing in general) for quite some time and have been getting back into (brewing) again lately. Back on page 17 of this thread, from last january, I posted about starting a batch of this wine. I ended up having an issue with a stuck...

    Skyrim and Mead

Great thread :) I'm thinking about using one of the Skyrim names for my 2 year old sweet mead (a blend of cranberry and orange blossom honey) I just botted. I'm not sure which name i'll use yet though.

Back from a long break, last beer has been in the primary 10+ months...

Yep, I think I'm going to bottle it and forget about it for a while. I don't have a lagering fridge, but it can stay in my cellar at least.

I use tap water filtered through a Brita filter. It's been sitting in a better bottle this entire time.

Now that I think about it, this is a possibility too. The airlock got low at least once...not entirely dry, but it may not have been completely airtight. I've always read that oxidation gives a cardboard taste though...that wasn't what I was tasting. I guess I could call it a "stale" taste...

Back from a long break, last beer has been in the primary 10+ months...

Yeah, I was pretty surprised when I tasted it to be honest. I left two other beers in the primary for nearly as long before due to another extended bout of laziness/low interest, and they were some of my best beers! I'm not sure if the taste is meaty really...rubbery is the best description I...

Back from a long break, last beer has been in the primary 10+ months...

Hello, all! As the title says, for various reasons I haven't done any brewing for about a year. I have a Dopplebock that has been in the primary for around 10 months. I had pitched it onto a cake of Wyeast German Ale yeast which I had used to brew another beer, so some of the yeast is...

    Caramel apple cider

Thread necro time... Yes, boiling did the trick all right. The batch of caramel cider/graff with the wort boiled came out great! It has a nice cider taste, a bit tart, but with a slightly sweet/caramelly roundness to the taste that keeps it from being overly sour. It's aged well too, as I...

    Too long in primary

You'll be fine. I had two beers stay in primary for even longer than that last year due to life's insanities...when I finally got around to bottling them, they turned out great.

    Welch's Grape Juice Wine

I got some EC-1118 and made a starter with juice on Sunday, and it was fermenting within an hour...then I added some of my stuck wine to it yesterday, and pitched the whole thing before I went to bed. This morning, there is a ring of bubbles in the carboy and some nice fizzing going on :)

    Welch's Grape Juice Wine

I'll admit, I did not take an OG. I guess I must have felt it wasn't necessary , since the sugar content of the concentrate should have been a known variable. Maybe Welches grew super grapes last year...who knows at this point :o I'll do as you suggested- I was already thinking about...

    Welch's Grape Juice Wine

Huh, my batch is still acting really weird. After measuring a gravity of 1.028 after a month, I warmed it up to the mid-70's for a week, and noticed that fermentation appeared to take off again. I just took another gravity reading, and it's only down to 1.025. For the past day or so, there...

    Brewing with... snow?

Nice idea! I'm tempted to do the same with the huge amount of snow I have at my place (28 inches from the first storm, then 24 from the second.)
