    Blueberry? English Ale

I recently had a porter from Detroit Beer Co that was really good. It had a medium body, good amount of chocolate and roastiness, and finished with some light fruity esters that I swear tasted just like blueberries. I ask the bartender about it and she said there were no blueberries added, but...

    Gose

I'm thinking about experimenting with a Gose style beer. I wanted to see what everyone's tried. What's worked? What hasn't? Any tips or comments on German sour ales?

    Extreme Specific Gravity

Also, any comments on yeast blends? I was planning a blend of WLP001 California Ale to ferment clean up to 13%, follow it with WLP099 Super High Gravity which can tolerate up to 25%. Now I'm considering an intermediate belgian to add subtle ester notes, which WLP099 might add anyway, but I...

    Extreme Specific Gravity

I have a different overall recipe, but I was thinking about following a procedure similar to this. http://byo.com/boiling/item/51-21-alcohol-all-grain-beer

    Extreme Specific Gravity

I'm assuming the concept behind step feeding is either to keep the yeast reproducing so there will be enough to finish the job and/or to keep the density low, so that the total sugar converted is enough, but the density at any point during fermentation isn't too high.

    Dry Hopping too long?

I brewed two IPA's using the English method for lautering. One was a 3% simcoe SMASH and the other a 6% Cascade SMASH. When I went to rack the beer from the secondary, it seemed like I just wasn't getting enough flavor from the hops. I used 1 oz to dry hop for each. I've seen some people say...

    Extreme Specific Gravity

I just had at thought. I'll use a measuring cup, dilute the wort by 50%, multiply that gravity by 2.

    Extreme Specific Gravity

I'm planning on brewing a 20% beer very soon, but I just realized that my hydrometer and refractometer don't read high enough (1.2-1.25). Any suggestions on how to measure it and subsequently the beers progress?

    Blonde Coffee/chocolate stout

I can try from memory. It was simple SMASH. SMASH beers can be some of the most elegant, and have ranked among my best brews. 14lbs 2-row Mash ~150F FW 1 oz Cascade 60 min 1 oz Cascade 15 min 1 oz Cascade 1 cup coffee (crushed) 1 tsp Irish Moss 5 min 1 oz Cascade

    Blonde Coffee/chocolate stout

I only used a cup, so the flavor wasn't as intense as some coffee stouts, but it was still very good, and the color was unaffected.

    Using Honey Malt

I've used a lb of honey in a wheat ale and it was awesome. Depends on what you're going for.

    Blonde Coffee/chocolate stout

Probably too late, but coffee adds little to no color in beer. I realize it adds a lot of color when making coffee, but you use an amount for maybe 1-2 pot in 5 gallons of beer. So, add as much as you please. I've added up to 3 cups to a coffee stout. I just made a blonde ale with coffee and...

What temp does lager yeast stop fermenting?

That's true. I know the california common ale is brewed with lager yeast at ale temperatures, but that's not really what I was going for. I may have to leave it for a couple days anyway, considering it's probably cold enough to stop fermentation right now. Hopefully it turns out well, I'm...

What temp does lager yeast stop fermenting?

I brewed a doppelbock in the hopes of cold fermenting it in my garage. I pitched the yeast at 68F, made a starter 24hrs in advance, and am letting fermentation begin at 68F for the first 24hrs. I want to the then store it in my garage, let the temperature lower, but I'm concerned it's too...

    cheesecake and other crazy ideas

On my way to a beer festival, a good friend of mine was excited to try as many unusual and exotic beer flavors that he could and jokingly said he wanted a cheesecake beer, and this got me thinking. People make carrot cake beers, different types if pie beers, and all variations of desert...

    Heating Element

I'm using 2 for 5-10gal batches. I'm asking more about converting to 220V. I could potentially use something like this with similar results. http://www.ebay.com/itm/Electrical-Element-Helix-Booster-For-Water-Heater-4500W-Stainless-Steel-/171187022711?pt=LH_DefaultDomain_0&hash=item27db8aab77...
