Cream Ale Cream of Three Crops (Cream Ale)

So I entered this in the local HB competition and here's the sheet: http://lvhb.org/mm_2015/scoresheets/0404.pdf Lots of too dry comments. But I think it's a good start... looking for improvements.

Cream Ale Cream of Three Crops (Cream Ale)

I had a bumper crop of raspberries this year, so I secondaried my 5 gallons on somewhere between 3-4lbs of my berries. I froze the berries for 48 hours to kill off any wild yeast, then racked on top for 3 days after am 8 day primary. The glass is sweating because it's humid as all get out...

Might have screwed up with Orange peels

3 tangerines, with a batch size of about 4 gallons final. I think I will let it ride and see what I get. I was basically using what I had left to more or less fill a fermenter and not have extra grains around. It's Mostly pilsen, with some cara-pils white wheat, flaked maize and citra...

    Reusing bottles question

I do this exact system. Rinse well, then oxy-cleansoak for the labels, rince, store upside down in old cases. Then Dishwash on Sanitize followed by a dunking in some hot star san solution on bottling day. I've had zero issues. If I see ANYTHING in the bottle, I toss it. No sense in risking...

Might have screwed up with Orange peels

I wanted to try adding some tangerines and cloves to a American Ale style beer tonight, and I figured I'd toss in the peels for some extra flavor. I got extra flavor all right... like I drank a damn bitter peel. I added some honey to counter, but it's still very much there. Would this...

Best Water Profile for Cream Ale?

I read up on the water chapter in The Brewer's Bible by Brian Kunath. I don't have any real solid ways to check, but Cream Ales tend to be a bit heady, and softer water tents to hold surface bubbles longer... so I have a pretty good idea what my water does swishing it with a spoon. I look...

Best Water Profile for Cream Ale?

The last 2 cream ales I did I added about a 1/2 teaspoon of Kosher Salt to the mash water. I didn't use the salt in the sparge water. I have high iron and medium calcium in my well water. I have 2 whole house filters, a 25 micron and a 1 micron filter, and then I run my water through a...

    A Christmas rant

I'm in-between jobs. I went after a much better opportunity while dealing with a lot of BS in my old position. Well, the "break-up" didn't go at all the way I had hoped and ended up with zero income for 4 weeks while I anxiously awaited a start date. Moving back further, I took a massive...

Autumn Seasonal Beer Pumpkin Wheat Cream Ale

Giving this one a try. Scored a longneck pumpkin, some fresh whole cascade hops I picked last summer and the proper yeast. I'm also going to finish it with some teamaker hops for a bit of a hop aromatic to it. I'll probably bottle it in less than 18 days, because I'd like it to be carbed...

Adding fruit. How do you do it?

Freezing is two-fold: it kills off wild yeasts and breaks the cell walls to enhance flavor. However, pectins are also released which make the beer cloudy. I started a similar thread a while back and most everyone says to add fruit to the secondary, aftert you've measured your FG that...

    Fruit Beer Wild Strawberry Blonde

Made some a while back. This recipe needs age! The longer it's in the bottle, the better it gets! Sent from my iPhone using Home Brew

    When to add fruit

I had read somewhere that pouring the wort post boil over the fruit would set the pectin in the fruit and make it impossible to clear. I was looking to see if I was doing something wrong.

    When to add fruit

Hello all! I have a question about when to add fruit to beer... I made a Brooklyn Brewshop Blonde Ale kit, and when I went to chill it post boil, I used frozen wild blackberries to aid in the cold-crash process. It made a pretty cool looking hazy beer, but I never made any attempt to clear...
