When and how to add oak chips?

OK, so i've searched the forum and I get the idea the best time to add the chips is in the secondary. And that the best way to do so is to soak the chips in some whisky or bourbon for a week or so, then add the chips and booze into the secondary. About two ounces of chips should do the trick...

    My first parti-gyle proposition

So i've done a bit of research, and I think Monday I'll do my first parti-gyle! I understand the basic principal: Do a large (16+#?) mash with little to no sparge for a big beer, and drain completely. Re-mash/batch sparge original grain to yeild a second wort that is lighter in color and...

    can I lager now?

I've got about half a dozen all grain batches under my belt, all ales. With our overnight temps holding steadily in the 50's or lower for the next six months, i'd like to start making lagers! I can lager the beers in a cold room that stays at a fairly constant temperature. Having said that...

What did i make?? 4th AG

here's the recipe: 10# 2-Row 2# Vienna 12 oz. 40L 4oz Melanoidin Mash was a bi**c, could not hold temp in my crap cooler in the cool weather we had today. Took close to three hours, with lots of extra boiling water and a few "decoction" drainings/heatings just to keep the mash temp...

my first AG, thanks to HBT!

If it wasn't for this website and forum i never would've dove into AG after 3 months of brewing. My first AG was Ed's Haus Pale Ale. I stuck to the recipe with the exception of adding .33 oz Centennial Hops for aroma. Just had 'em in my freezer and figured i should use them sooner than later...

    I made too much beer!!!!

Impossible for some perhaps, but i kinda screwed up! I mashed 8 pounds of grain and forgot to add my LME until everything was in the primary. So i "melted' the LME with some water on the stove to dissolve, and added that into the primary as well. I ended up with 6 gallons at 1.072 and i...

    3rd time's the charm!

Last night i brewed my third PM. The guy at my LHBS told me i had un-realisticly high efficiency on my past two PM's. So just to test my mashing and sparging I measured pre-LME. Here's what I did: Cherry Wheat Ale, 5 Gal: 5.5 # 2Row 3# German Wheat (malted?...i forget) 4 oz Carawheat...

    Dry hopping in bottle

Can i dry hop in the bottle? I've read here about people dry hopping their kegs, thought perhaps i could drop a pinch of hops (not pellets) into the bottle. The finished beer won't be around for much longer than two months. I bottle in 750ml champagne bottles.

    Cherries!

Cherry season is well underway here in the Pacific Northwest, and soon they will be in my beer! My only problem is I don't know the best way to use them. I'm leaning towards a Kriek, but i don't know that i want to tie up my only fermenter for a whole month or more. There's some decent cherry...

    how to reuse yeast

I've just racked an ale into the secondary and want to reuse my yeast. Do i have to do anything to the yeast in order to reuse it? I've got about 3/4 cup of what looks and smells very yeasty, no trub or other materials appear to be there. Can i just pitch this into my next batch that should...
