    Single bottle force carbonating help.

After years of drinking more than is considered healthy, I'm taking a little hiatus and exploring other fun beverages. The passion is still there and I've switched to craft NA beers, hop waters, seltzers and hop teas. I still have pounds of hops and a bunch of teas, why not make my own? But I'm...

    First high gravity brew (help)

5 gallon brew, 12 lbs LME, after boil off, topped off with cold filtered water to get to 5.5gl. I added at least double the yeast pitch as usual plus a yeast starter after 12 hours of no action. Took a gravity reading after 1 week and hydrometer read 1.040. Usually my 7% beers get to 1.012...

    Suggestions for Belgian dipa/quad.

I'm going to try to use up a bunch of stuff I've had laying around for a while and I just got my delivery of StarSan. So right now I'm looking at my 6lb wheat LME, 6lb amber LME, and a bunch of off brand hops. 5.5 gallon boil for 30 minutes. I am aiming for a 65 ibu and after bottling half the...

    Wheat LME vs. pilsener taste.

Long time, no post. I've been trying my hand with other fermentables in the new house and new job. But I want to get some Northern Brewer wheat LME in bulk on sale. Still have a bunch of hops in my freezer that I need to use. I don't love a lot of the darker notes in my beer. I like pilsener...

    Just EFF it "beer"?

Welp, we all got Covid and I'm locked down on a quarantine. Let's brew! I couldn't find my LME, but I have a bunch of hops and fruit I wanted to use. All fruit was fresh when frozen. 1 gallon bag of frozen grapes .5 gallon bag of frozen blackberries .5 gallon bag of frozen blueberries Small pack...

    Coconut milk in beer?

It's been a while, everyone. Hope were all safe during this time. Happy New Year. The last beer I made was a pumpkin pie ale with real pumpkin, graham crackers, honey and brown sugar. No pumpkin pie spice. Then did a split batch with child brew coffee, nutmeg, ginger, allspice and clove. And a...

I just added 6 Dole fruit cups...

Making a happy pale ale. Added 6 Dole mixed fruit cups. I hope it's good. Lotsa sugar and the mix of peach, pear, pineapple and cherry should be a fun addition. I'll let ya know, kidoos. Anyone else done this nonsense?

Can I add gelatin to fermentier?

I see a bunch of adding it to kegs, but I bottle. Could I add it after primary and racking after a few days? Will that leave most my sediment in the fermenter?

    How to avoid infections?

I was so much more careful than last time.

How much ginger should I add?

I am going to try for a ginger, lime and honey added to 3 gallons in secondary. I'm going to test and think slice 1 whole lime and add about 4 oz honey. I am just going for a light flavor. Any idea how much fresh ginger to add? I'm going to bring this all to a boil in a little water to avoid...

    Does this look like mold?

The film on top of my secondary is something I am familiar with, but this looks a bit funkier than I am used to. I added pureed and heated nectarines and boiled lemon iced tea my wife didn't like. I thought I killed all bugs.

How much sweetness does honey impart?

I used some old crystalized honey to kick up the ABV of a brew a week into primary. My approximated increase was from 5.4% to ~ 7.9% which is cool. I actually got down to 1.008 on this FG. But I wonder how much sweetness I might be getting from the honey. I used Jasmine, chamomile, prickly pear...

    Has anyone brewed with nectarines?

I do split batches whenever I brew to keep it interesting. I have an ale with early addition Newport and Northern Brewer and late addition Willamette and Crystal hops. I have some overripe nectarines and wanna throw them in once I've reached and bottled half of this guy. Any suggestions on...

Not as impressed with third brew.

I was thinking I was doing well. Now I wish I'd done X, Y & Z to this before bottling. ...and I have 30 bottles. It's not bad, but I wish I would've built my malt profile more. GDMFing hindsight. I thought it was going to be great before carbonating. Super juicy. I used Centennial and Northern...

What about dumping Arizona tea into ferm?

I had a dream last night that I couldn't find Arizona Green Tea w/ Ginseng and Honey. Weird dream, but you know I bought some today. Damn right! I just bottled beer 2 days ago and while thinking about my next brew day, drinking my delicious tea...I thought... So, what do we think? It Saturday...

Something betwixt barley wine & bochet?

I am looking into making something that resembles a barley wine, but using methods from a bochet mead to beef it up. I am hoping to impart a little, char or smoke, either vanilla or almond extract, candied orange peel, and then...I'm not sure. I don't want to go into coffee or chocolate...

Would almond milk or almond extract ruin head retention?

I'm looking at making a darker beer with some rich flavors and I like almonds... Does the nut beverage or extract ruin beer? I'm thinking cashew, almond, etc... I know people often use PB2 or the like to get peanut butter flavor because the oil is stripped out. Any ideas or knowledge?

    Increase ABV during fermentation?

So generally I like to do split batches when I brew 5.5 gallons. It allows me to experiment and change the flavor up a little. I have a brew in primary right now and was going to add some hibiscus, wild cherry bark, lemongrass, rosehips, orange peel and peppermint. Sounds weird, but i have tried...

    First attempt at rinsing yeast.

I followed instructions pretty well, I think. But is the only bit of yeast the little white later in the middle? This is an experiment more than anything.

Wow. I actually enjoy my Homebrews!

Not to seem like a jackass, but I had a homebrew, grabbed a beer I enjoy by a brewery I really enjoy and found myself wishing I had another of my own instead. I'm lucky I didn't make something that sucks (to me). I understand there's something called the "IKEA Effect" that says people like...
