Cyser test with nottingham ale yeast

Just did a taste of a batch with a horrid smell and suddenly it's all gone. Weird... it's been chilling (literally) in my garage during negative C temp and suddenly cleared up and got rid of smell. I guess, it's time to bottle.

Cyser test with nottingham ale yeast

This batch turned out delicious. It's clear, smells amazing and taste great. Edit - Forgot to add. This batch produced 6 x 1.5L and 8 x 750ml. Bottled on the 27th Dec. I moved it to garage (ie cold crashing) on 25 Nov.

Best guess what happened to this?

If this is the only one of it's kind in your inventory, I would throw it away and stay away from this brand. That doesn't look right at all.

    Mead Question from newbie

Other course of action is to create 5 gallons and then divide it. I like to add fruits once fermentation is completed. I use BatchBuildr - MeadMakr to add enough honey to go slightly past tolerance of yeast (ei 14% abv).

    Natural wild yeast

One have to be careful to find raw honey that wasn't treated with heat.

    Natural wild yeast

I did. With only 50 batches behind my belt, I'd rather be more on the safe side.

    Natural wild yeast

I've done no nutrient mead. It would take 3-5 times longer. Wild yeast is an unknown - it could produce anything from a super low abv to most horrible sulfer smelling "beverage". Given that most people don't like to take chances with expensive honey, you would find very few to none trying wild...

    Turbo yeast

I'm using it for cyser and not basic mead Notti ale yeast produced great smell and taste, just slightly bitter. I've done 2 batches (dry and sweet) and all turned out great. Right now I'm doing another cyser with notti-ale with plan to step-feed it just as a test run.... Compared to other...

    Turbo yeast

While following nutrient protocol, when brew is dry, you add little more food (honey) until it goes dry and keep doing it until it stops going dry.

    Turbo yeast

I've used LalBrew high performance nottingham ale yeast to do cyser which topped out around 15-16% while step-feeding....

"Regal" Mead recipe from befrore 1950

Looks like it has a potential of 8.5% abv if it completes fermentation to dry.... reminds me of my attempt of low abv mead. One month, low abv mead test.

    Very-very cranberry mead

Bottled this batch few weeks ago. A bit too early due to clarity, but I needed room for next batches. Result - 16 bottles x 750ml. OG 1.106 ~3 Gallons of water ~1 Gallon of raw honey 5 grams of GoFirm 7 grams of E1118 Start 29 July 19 Sep Confirmed - Finished fermentation with FG 1.010 No...

First attempt and I'm not sure if it's going better than expected, or something wierd is happening.

What temp was your bucket with brew during fermentation? I suggest continue...

Do cranberries and blueberries flavor mix well?

Bottled few days ago this beverage. 25 x 750ml. To answer my own question - yes, cranberries and blueberries do go together. 2.5 blueberries to 1 cranberry ratio worked.

Making mead for first time, can I only use FermFed without DAP additions?

I've experimented few times without adding anything but GoFerm. It takes from a normal 2-3 weeks to 3+ months time frame to finish brewing. Can it be done? Sure....if you want to wait that long.

To Swirl or not to Swirl that is the question...

I like to keep lazy yeast working....so mixing is what I do.

Cyser test with nottingham ale yeast

On Nov 18 (while under influence) I've added unknown amount of honey to the batch. Next day measured it at 1.016. Today, Nov 22, batch 48, is measured at 1.012. Taste is good, sweet and little bitter. Already drinkable at 15%. Smell has no-grotesqueness. This maybe my go-to method and yeast...

    Very-very cranberry mead

Update on Batch 43. OG 1.106 FG 1.010 ~12ish ABV I've added 2kg of cranberries on 18 Oct and removed them on 27th Oct. Today poured a glass. Clarity is getting there. I can read this text through wine glass. Smell of cranberries. Nothing smells off-putting. Taste is not overwhelming. Just...
