wyeast 3068 Weihenstephan Weizen vs 3638 Bavarian Wheat

I finally decided to try the 3068 and fermented it warm but steady at ~72f because I don't have a good setup for temp control (I know Jamil says 62f but that will have to wait for winter). Was in primary for 2 weeks and bottled for 1 week. First samples are surprisingly good and I think I do...

Who cares if head retention sucks?

I am one that could not care less about head retention or appearance and focus on the aroma body and flavor. I always brew wheat beer and maybe it was Dr Bamforth that said using too much wheat can actually decrease haze and head. I just tried brewing with half wheat and half munich just out...

Charlie Talley (Five-Star Chemicals) Notes from Brewcasts

Resurrecting here but I think it was Jon who said when it comes to PBW, consider the four factors CTTA Concentration, Time, Temperature, Agitation. He said it rinses easily and works well enough in cold water. I am always trying to save energy so I go low on the temperature and concentration...

wheat dme preferred for wheat beer starter?

I was re-listening to Jamil's Bavarian Weizen show from 2006 and he pointed out that in Germany 50% wheat must be used by law. Apparently the reason is because the yeast need a certain compound that exists in the wheat in order to create their signature flavor of banana and clove.

    Aeration methods?

I use the shake the jug method also. I use partial boils so I have 3 gallons or so of R/O standing by in the primary during the brewing, so I take that opportuntiy to shake the jug for a few minutes. Hold it close to your body, keep your back staright and use your legs. It works great and is...

Wyeast 1214 Belgian Abbey - Alternate Use?

Nice tip on the flying dog, I have got to try that one.

    Cracked Coriander?

I used the rolling pin method too, crushes it up nicely.

    Star San question??

I get the rotten egg smell when my solid rubber stopper comes in contacts with Star San. This is especially true with newer stoppers. Despite the smell, it has not degraded or pitted the stopper. I also spray it liberally all over the place during brewing and bottling. The counter tops...

Let's talk about Foam Control drops (aka Fermcap)

I just brewed and fermented (2) 5.25 gallon batches with Belgian yeast strains and 6 lbs of wheat DME. Normally that would be 24-36 hours of nonstop foam and goop blowoff. I added 3 drops of Fermcap S and I am glad to report ZERO blowoff. There was a healthy krausen which almost perfectly filled...

Better Bottle 6 US Gallon Better Bottle

I prefer these over buckets due to lower chance of contamination when open. I prefer them over the glass carboys due to lower cost and lighter weight. I end up carrying these things up and down the stairs when they are full so less weight is ideal. The lower weight makes for easier cleaning...

Let's talk about Foam Control drops (aka Fermcap)

Interesting tip. For any brewers that try this, make sure the pennies are actually copper (1981 or earlier). I recently gave RebelBrewer a try because they have great prices on DME. My first batches using wheat DME in place of wheat LME resulted in mega blowoffs (5 gal wort in 6 gal Better...

    Differences Between LME and DME

I have always used Wheat LME from Northern Brewer for my recipes. The last 2 batches I brewed I ordered from Rebel Brewer which sells Wheat DME cheaply, so I tried the DME. The result was that during fermentation both 5 gallon batches violently overflowed my 6 gal Better Bottle for about 24...

    sanitizing small batch bottles

Hi Dirt55. I use a simlar method to what you described but your method is interesting as well, I hadn't thought of that. I rinse my bottles right after they are used, but sometimes lil bits of yeast remain on the inside of the glass from bottle conditioning process (you might not have this...

    chloramine in water

Walmart sells reverse osmosis water for 37 cents per gal from the Culligan Machine. I have heard that other grocery stores have it also. As far as I know R/O is the only filter style that can remove chloramines. If they are sent through activated carbon filters only, I think it results in ammonia.

Never had a blow off, am I doing something wrong?

I've only brewed 9 batches so far but I use extract and my method has been relatively consistent. I use 6 gal Better Bottles. Once I started aerating the cooled wort better (shaking violently for 3-4 minutes) I noticed higher krausen (almost overflowing the 6 gal bottle). The first time I...

    CO2 headache

My bedroom is all sealed up and I sleep about 10 inches off the floor. Sometimes I have uo to 10 gallons of brew fermenting in there while I am sleeping. I keep waking up with mild headaches while they are in high krausen. Today I finally put two and two together and realized I might be...

    Krausen going beserk, why?

I woke up this morning and found gobs of gooey yeast had built up outside the jug. It smelled really good, like apple cake I'd say. I have another 5 gallon batch made with 6lbs wheat DME but using a different yeast strain. The Krausen is just forming now we'll see if that one misbehaves...
