    I haven't thought about doing just a regular starter with O2 at the start. That should work then I would have less oxidation of the wort. The simple answers don't always come to me. ;)

    Does Briess Munich 10L malt need protein rest?

    All it said was Weyermann Pilsner malt. I don't recall seeing anything other than that. I guess I can cut some grain and look at the acrospire to tell how modified it is since I don't have a malt analysis I think.

    I use a 3 prong dryer cord that has ring terminals on it. I took the ground terminal and bolted it to the bottom support of my keg using a large self tapping screw.

    I had the same issue trying to use the stock gasket and the oring on the lock nut. I ended up rolling the stock gasket and ruining it. What I ended up using was a red oring on the lock nut along with a red oring on the threads outside where the stock gasket was. That worked great with no leaks.
