    IMHO you should carbonate your apfelwein. It really is much better than drinking it still.

    Thanks for the tip. I think I'll just use 5oz of dextrose instead of the concentrate. Patience is not one of my stronger points.

    Seven weeks in primary. I couldn't help but steal a little sample, and oh is it good! It rally is tasty now, but a few months in 1 liter EZ cap bottles and carbed should have this tasting like dew from the heavens.

    Pale ale with citrus zest. I'll have wheat for about 25% of grain bill. Summer is on its way, I need a change from the heavier, malty brews.
