Yea no kidding. I used Simcoes for bittering, amarillos for flavor & late aroma addition, then dryhopped with Cascades. And Im not kidding when i say this, but it definitely tastes like grapefruit. Its actually really good, and this summer its going to be a great Pale on those hot days.

This is my first time using Simcoes, and Im really enjoying this brew. Anyone else experience grapefruit or citrus from this hop strain?

Weyerbacher (PA) makes a Simcoe IPA, single-hopped with that one hop. It's pretty good...not the most grapefruity thing in the world, but pretty grapefruity nonetheless.

If you want to taste a real grapefruity beer, try Yards' Pale Ale. Whew! Like suckin on a grapefruit, it is. Though, I have no idea if they use Simcoe or not.

I love Simcoe and Amarillo together.

Both of those hops are really fruity. I get pineapple from the Simcoe and peach and grapefruit from the Amarillo.

Ive got my own All Simcoe IPA goin right now (just put in primary),
Hopefully I can weigh in on this important debate in the near future.
Heres my recipe for interested parties:

3 lbs Light DME
5 lbs Pale Liq. Extract
12 oz. Biscuit Malt
12 oz Caramel 40L
4 oz Flaked Wheat
.5 oz Simcoe Hops (60 min)
.5 oz Simcoe (20 min)
1 tsp Irish moss
.5 oz Simcoe (10 min)
.5 oz Simcoe (0 min)
WL CA yeast

1 oz Simcoe (dry hop with secondary)

OG 1.064
IBU: 42
Color: 12.6 SRM

let us pray...

I'll echo what Dude said....the grapefruitiness is most likely from the late Amarillo additions. Cascade can have it, too.

And that Wyerbacher Double Simcoe IPA is the most harshly bitter thing I've ever drank. It's badass, but it's the first beer I've ever had that made me say, "I think this one may be over the top." :D

A little late now, but I'd say your IBU's are too low for that beer. Of course you can always compensate with loads of dry hops. :D

yea I used this gravity/hops graph I found on the net ( http://www.brewsupplies.com/hops-gravity.htm ) to pinpoint 42 IBU as straddling the line betwen hoppy and extra hoppy. Maybe the graph doesnt take into consideration thant I'm doin an IPA. What would you folks have put the IBUs at. (dont mean to highjack sry)

I have 2 oz of Simcoe plugs I can put in as dry hop.

So would you use Amarillo with a wheat recipe?

Added early for bittering, or late for aroma?

I don't see why not, but typically wheats use a more mellow hop. Even the American wheat style isn't very hopped up. It would be an interesting attempt though. Pineapple wheat. :mug:

I'm going to transfer over my Single hop brews tonight and dry hop them. I'll post a report later on the Amarillo.
