I have gotten a request from my cousin for a Black Forest inspired mead. She would also like cardamon added as a spice. I have found many recipes for chocolate/cherry meads. I just don't know how much of the spice to use and when to add it in.

Help is much appreciated
 
Yeah that's tricky. I've used cacoa nibs in mead and it turned out alright. You toast them up before putting into the mead and with cardamon, I wouldn't use much as it's fairly powerful. If you look around this site on other recipes, you can get an idea of how much to use (that's how I do it anyway). Good luck!
