- Hint of Chocolate, more noticeable as it ages. Hop forward initially
Recipe: Ch'Amber
10 lb Maris Otter (muntons)
.5 lb Pale Chocolate 200L
.5 lb Caramel 90L (6-row)
Mash 152 F 1 hour
Batch Sparge
Hops
2 oz Cascade 60 min
2 oz Cascade 5 Min
This beer ages very well. 3 weeks post bottling it was carbed and ready ( not green), it was very hop forward and smelled like a grapefruit, a nice malt backbone but definitely hop forward.
Fast forward 2 months and it smells delicious, except that it's the malt that comes through. The hops have faded, but melded nicely with the malt. Definitely get a hint of chocolate and breadyness in the nose. Has a much cleaner bitterness than before that lets the Maris otter and Pale chocolate malt steal the show.
Overall Impressions: Reminds me of a low gravity barleywine, sounds weird but that's I get. Hop heads will definitely like it fresh, while the ladies in my family like it 2 months old.
I prefer the slightly aged (2 month) version. I'll report back on the 1 yr version.
Will be brewing again with 1 oz cascade bittering and 3 oz at 5 min.
