In the United States, apple juice refers only to juice that has been filtered to remove the cloudiness; it may or may not have been pasteurized, or had preservatives added to it. "Apple cider" refers to unfiltered juice.

In the rest of the world, apple juice refers to any form of unfermented juice, including the varieties known as "cider" in the United States. "Cider" is reserved for fermented, alcoholic beverages brewed from the juice.
