Venturi Device

A Venturi Device is a simple and passive way to aerate a liquid such as wine or beer.

Introduction

Passive aeration is accomplished through something called the Venturi Effect. The Venturi effect is described as, when a reduction in fluid pressure is created as a fluid flows through a constricted section of pipe. This effect is named after Giovanni Battista Venturi (1746–1822), an Italian physicist.

Basically, the difference in pressures from the larger pipe/tubing to the smaller diameter pipe/tubing creates a vacuum. A small inlet of air is allowed where the vacuum is created, allowing air to enter the stream of liquid. Very simplistic, but very effective in aeration of a liquid.

Use for Wine

In wine use, this device is used to aerate the wine right before it is served for drinking. The devices sold offer an alternative to swirling, traditional decanting, and just simply waiting for the wine to breathe.

Use for Beer

The Venturi effect helps us in beer during the brewing process. After the wort is boiled, it is devoid of oxygen. The yeast used to ferment the wort into beer require oxygen to grow to a size large enough to finish the fermentation process with little or no off-flavors. Most often tubing is required to transfer the wort to the fermentor, either with a pump or a simple siphon. Some brewers rely on their aeration from pouring their wort into their fermentor and/or shaking the filled fermentor. If tubing is used, there is already the infrastructure there to build an inline Venturi Device. There are a couple of different ways to build a Venturi Device, and they range from simplistic to more complex. Here are just a few examples of very easy to build devices to aid in aeration of your wort.
