    anxiously awaiting for it to lager/ clear . ill give it about a week , i cant wait. ambient temp fermenting like in the old days is so nice. no ferm fridge / temp controller. no ice baths, no coils. so much easier . only now it makes good beer. lol

    how important in your opinion is aeration, starter and yeast nutrition?

    With dry yeast not so much. I have forgot to aerate or done a very poor job aerating and have never noticed a difference on final product. Obviously no starter needed with dry yeast but I even gave up rehydrating after not seeing a difference with direct pitch. Lastly I only add nutrients...

    Hard mead tastes like pure alcohol

    yeah pasteurize for short period like 15 mins at 170. not hotter and not longer. this should kill your yeast but not effect flavor that much.
