Imperial Stout Russian Imperial Stout (2011 HBT Competition Category Winner)

I brewed 6.6 gallons of this the other day but with s-04, OG 1.090 FG 1.018. I made a two stage yeast starter from 11.5g pack of yeast, first one 1.8 liters next one 3 liters, dont know how many cells I had but probably somewhere north of 500b. The yeast took it down to 1.018 in about 3 days...

    Voss Kveik Fermentation Profile?

I really like the taste profile of voss. In a simple pale ale for example it rocks IMO. I don't use it that much because last time the beer tasted excellent but I got very hungover from it. I pitch per recommendation from the Norwegians (severely underpitched) and maybe it throws a lot of bad...

Imperial Stout Russian Imperial Stout (2011 HBT Competition Category Winner)

Thanks! I saw in the pitch rate/yeast starter tool in brewfather it recommended me to pitch about 750 billion cells or 5 bags so now I'm making a 3.4 liter yeast starter for the two yeast packages to hopefully hit that amount. I think I will maybe increase temp 1°c or such.

Imperial Stout Russian Imperial Stout (2011 HBT Competition Category Winner)

Hey, I'm gonna brew a variant of this one in the coming days. Using pilsner malt instead of pale ale malt, another hop for the 60 min addition and two 11g bags of rehydrated s-04 yeast instead of wlp002. The rest is identical. The yeast in the beer recipe has an attentuation of 63-70%, the...

    Bray's One Month Mead

Me and a friend just did a 25 liter split batch, half of it with 2 kilos of blueberries and a little black berries, and the other half clean. 1.120 starting gravity, don't remember what it ended at but around 15,5-16% alcohol. We followed the mead batch builder...

    Fermaid-k instead of fermaid-o

Thanks so much Dan. I read somewhere it's digested faster by the yeast than ferm-o which linger for a longer time, would it be wise to split the dose up in half, say 6.5 grams at 1.080 (which is where the second and only dose is supposed to be served) and one at 1.060 or lower?

    Fermaid-k instead of fermaid-o

Hello, we started a batch of mead using the mead batch builder: https://www.youtobrew.com/mead-batch-builder However we've run out of ferm-o for a second dose and there are non available to buy, can we use a dose of ferm-k of the recommended amount at first and only dose of K (which is a...

Dried Voss (kveik in general) is amazing

I love voss kveik. My beer with any other yeas (albeit not that many, maybe 8-10 others) I've tried never tasted as good. The more you learn about it the more amazing it gets, like pitching 5 ml of slurry in a 20-25 liter batch and it just loves under pitching, or the fact that you can dry...

    Hello, maggots in mead.

    Thanks for the info/help all!

    Hello, maggots in mead.

My friend looked at pictures of pantry moth larvae and commented he think the head of the larvae was black and not brown (like in most pictures of pantry moth larvae online). The body were white/transparent. Unfortunately I never saw a picture of the bigger white larvae, but I think I saw...

    Hello, maggots in mead.

Unfortunately we have no pictures, but here is a video, not the best video but its what we have. The other larvae/maggot was bigger, white and with a black head according to my friend. I never saw them myself, only saw this video and heard about them from my friend who has the batch at home and...

    Hello, maggots in mead.

Thanks guys, I think we will bottle it, while trying to see if we can find more maggots and let it sit, hopefully being in good shape. I also read on denard that fermaid-o which we are using has some pH buffering capacity, rendering potassium to be optional. Maybe we'll try without any...

    Hello, maggots in mead.

Hi, I've brewed a batch of 1 gallon BOMM mead before and did not use any potassium, this time around me and a friend made a 5 gallon batch and I read per denardbrewing that I could use dried apricots instead of potassium carbonate/bicarbonate for pH buffering (Denard Brewing). The pH buffering...

British Golden Ale Miraculix Best - Classic English Ale

Brewed a tweaked version of this, muskovadosugar instead of syrup, EKG for hops, Windsor yeast. Amped up to a 5,1 ABV beer. No water treatment (don't know how to do) but tweaked the hops for the stronger beer. It turned out really nice! Fresh and easygoing. Will probably brew again

    Bray's One Month Mead

Hello guys, I have a batch of bomm almost finished fermenting and a couple of questions: should I rack to secondary for it to clear when fermentation is finished? if so, should i cold crash before or after racking? if fermentation has proceeded well (which it has), is that a sign of not...

    Bray's One Month Mead

Yes I've realised this, two different websites, and this forumthread and the one at gotmead makes it a bit confusing to navigate

    Bray's One Month Mead

Such a goldmine of info. I've tried to gather info on BOMM from Denard Brewing before but this new website is better at explaining for a novice to understand. I've ordered Fermaid-O and GoFerm. Thanks!

    Bray's One Month Mead

Hello, I have some ingredients to make a franken-bomm, I have the wrong honey and will use abbaye dry yeast. Potassium carbonate is very hard to get a hold of around here, would Natriumbicarbonate work as a substitute? I have a bag with NaHco3 which I bought from the LHBS. I read that they...

    What are you drinking now?

How do you like opal hops? Good for dry hopping? I just got 5 kilos of it and need to sprinkle it everywhere. I've brewn my first batch with them, conditioning on bottle as we speak. I think I overdid the bitterness by quite a large margin unfortunately based on how it tasted after fermentation.
