    I like trying Kolsch yeast for other styles. I like it for cold conditioning like a lager. Works great in an Oktoberfest. Disclosure: for the folks who disagree, too bad! My brews, done my way.

    They might not be award winning brews but I don't see any reason for them not being drinkable. With the investment you have in them already keep them and try it. Most if us learn from our mistakes and try to do better the next time round. It's all part of the experience.

    My next Kolsch I will try the Omega yeast. I like the 2575 but it's in the private collection and comes out every three years or so. I have used other Omega yeast with good results.
