5+ years is blink of an eye to the wide world of brewing…
Personal faves:
Altbier
Dark mild (aged on oak)
Watermelon wheat
Cali SMaSH lager(California Select 2-row, cluster hops, steam beer yeast)
As others have said, moderation is the key. Set guidelines that works for you, and enjoy what you have instead of thinking about what you don’t.
One of my favorites is a dark mild inspired by this old BrewingTV video with John Palmer:
I have the presto 23qt. No problem getting to 15psig with the included weight (I live near sea level). I got the bigger size to hold more stuff beyond quart and pint mason jars. Bottles, erleneyer flasks, test tubes, tubing, etc…
I come from a place of having inherited equipment from follow brewers (late father-in-law), and know the guilt associated with not putting it to good use. It sounds like you have a good starting point to build out a brewhouse of any complexity. There are some big champions of single vessel brew...
I recently went down this rabbit hole. There are a lot of variables specific to your needs and location (altitude, specifically). Strongly recommend checking out USDA Complete Guide to Home Canning for the basics: https://nchfp.uga.edu/publications/usda/GUIDE01_HomeCan_rev0715.pdf

Switch position B
Block 1: power to PID B
Block 2: element fire switch to element contactor coil B

Yeah, I’ve only seen wedges like that as strainers for cooking pasta portions or blanching veggies. Was thinking you could do something similar with steam tray pans sitting up on a false bottom. All kinds of sizes to chose from, but they are pretty much round, square or rectangle shapes. Would...
I like the idea, but, coming from the perspective of struggling to mash and boil even a single batch at a time — I think you would want to have an individual level of control for each batch that steam or a single induction burner would make difficult to provide. Considering 1 gallon batches, you...
Nice setup! I am going through a similar set of decisions trying to dedicate a wall of my garage to brewing. My setup is similar with the brew stand next to the overhead garage door. Since its my only way in and out, it says open quite a bit meaning a constant battle with dirt and dust (and...
