    You bet! You can do almost anything with a kit that you can do all-grain except mashing, of course. Also can't subtract the hops and adjuncts/specialty malts. But you can add, and you can choose the yeast and manage fermentation, etc. Go for it!

    ^this!^ Super slow or inadequate carbonation (with hefty brews) was one of my biggest frustrations with bottle conditioning. Flat beer ain't really beer. Kegging eliminates this concern.

    I would've said this until a move to a one level house eliminated my excellent basement storage zone for beer (and wine).     Um, all my (CMB brand) beer disconnects are black, and all my gas disconnects are pale grey. Could you be using a gas disconnect on your beer post? They're similar but not identical.

    I agree with @whoaru99. It could be that the probe doesn't stick down into the flow, and is measuring the semi-dead space above the T.
