A few weeks ago, I brewed a Dunkel using a couple of packs of SafLager S‑189. My plan is to pitch a Maibock on top of this yeast, and when that is done pitch a Samiclaus clone on top.
The Dunkel is done, and I want to keg it for lagering. I don't have time to brew the Maibock today. Would it be better to leave the Dunkel on the yeast cake another week or two (I have it in a 6-gallon keg in a mini fridge at 40F) until I can brew the Maibock, or transfer the Dunkel off and leave the yeast cake in the fermentation keg? Is there a third option?
