Ugh, but I'm not very patient! The wort was SO tasty, and I'm really itching to try this one. I'm sure I'd end up saving just enough to regret not saving more ha!
Gonna brew this up tomorrow. I can appreciate a simple recipe. I've seen a lot of Pumkin Ale's with super complex malt bills and I'm just not a fan. I'll report back later after the brew (maybe).

I think enough people have said it by now, but this also sounds like oxidation to me. I had brewed for a few years before I did my first NEIPA and have never had any oxidation issues. I followed most of the same procedures when I did my first NEIPA, and it ended up oxidized. I can only imagine...

Great point. From what I've learned from some of the local prof brewers in my area, you won't want to reuse yeast after a high SG brew period. So if you've got something that's 1080, I wouldn't recommend using it on your next brew even if it's 1090. The high SG just puts extra stress on the...
Rubber band around the bag it comes in and then toss in a zip lock baggy and into my cupboard. I don't put much effort into preserving the DME, and have never had any issues with clumping or hardening.
Yea I wouldn't expect less than 1.010. Also, for what it's worth, most professional breweries will let a beer ferment until they get the same gravity reading 2 days in a row. You don't wanna rush those little guys. I say give em a couple days to clean up any off flavors they may have left...
