This is a simple recipe that I've brewed 4 times, and it is the beer I'm brewing for my wedding. I prefer beers on the bitter side, so this might taste like an IPA to some. If you like it less bitter, cutting the two cascade additions in half might make your pallet happier.
(mash @ 155 degrees for 45 min.)
6 lbs. Extra Light DME
1 lb. Flaked Wheat
.5 lb. Carapils
.5 lb. Honey Malt
.5 lb. Pilsner Malt
1 oz. Cascade (8.4aau) @ FWH
1 oz. Cascade (8.4aau) @ 20 min.
2 oz. Citra (12.3aau) @ 5 min.
**The most important thing to ensure that this beer has a clean finish is to keep your primary temp. as close to 60 as you can. It's low for S-05, but it helps the subtle flavors of the honey malt and flaked wheat to work with the hops**
