This year I'm putting my brew "science" knowledge to work in my Thanksgiving preparation... I'm "mashing" my sweet potatoes... I don't mean smashing, I mean holding them at mash temperature (~65C) for 30 min before boiling. I guess sweet Potatoes have enough diastatic power to convert themselves. Makes the sweet potatoes all the more sweet.
