As my christmas porter is in the cellar aging, i've been thinking of using some leftover honey and making a "near-braggot" wheat beer, spicing it to get some wintery feel.
base recipe would be something like:
5 gallons
5 lb wheat malt
4 lb pale malt
3 lb honey
1 oz hallertau at 60 mins.
.5 oz hallertau at 15 mins.
.5 oz hallertau at 5 mins
going to ferment it relatively clean with danstar munich.
now for spicing, what would be nice, any ideas?
citrus flavours of course would do well, maybe some actual spice?
