    Hard Maple sap cider

just a follow-up after my roll out of my Brew to my family who likes to drink mostly beer and wine. My wine and beer snob sister tried this and exclaimed that it was the most professional tasting cider I have ever made. She didn't drink wine the rest of the night that she even brought herself...

    Maple Sap Profile

my maple sap hard cider turned out very well. However like you said I could not taste as much maple is a preferred and it was a little drier than I wanted. So I sweetened it up with 3 cups pure maple syrup and a little malic acid. it's the first cider my wife really likes. And you really can...

    Fermented Maple Sap?

I just finished a very successful maple sap cider. I had to add about 4 pounds of sugar to bring the alcohol content up a few percent. But it tastes wonderful, and it's really cool knowing that no water was used. Check out my recipe.

    Hard maple sap cider

I tapped a sugar maple back in March and got 10 gallons of fresh sap. I put 5 in the freezer in case I wanted a second attempt (last year I wrecked it by not being sterile enough). Once in the cleaned carboy I added a local yeast I harvested from a winter brew (Windy Brow Farms In Newton, NJ-...

    Welch's Grape Juice Wine

I would fix it by adding EC1118 to it for another 30 days.

    Stopping fermentation

Here is my latest recipe: Fill the carboy with Muscleman’s Cider, pitch the yeast, stir and put a bubbler on it. The yeast I am using Lalvin D47 After the bubbling stops (it could be just one month during the summertime – 3 in the winter), I kill the yeast with Potassium Metabisulfite (as...

    Alcoholic ginger beer

Ok, I bottled this a month ago and it was fantastic! I added 2 liters of ground and pressed ginger root (5 pounds) and about a gallon of Tree ripe sweet and sour mix). It's about 7% alcohol. Very nice to have a brew that doesn't try to cover over an apple cider flavor. My friends say it the...

    Alcoholic ginger beer

I am working on that right now. A month ago I started a 5 gal batch of well water with 7 lb sugar and wine yeast - EC-1118. OG was 1.09. Now it's 1.03 and it measures 5% alcohol in my Vino o meter. I plan to go down to 1.01 then add ginger and lemon. Or even cheat a little and add some Jamaican...

    Watermelon Wine

I have a 5 gal batch of apple, grape and watermelon juice (Wal-Mart) that is done fermenting and cleared. I stopped the yeast and next I will be adding watermelon flavor (as it got lost in the fermenting process). This is the stuff...
