    Recipe looks good. The only question I might have is, why 2lbs of crystal? I was under the impression that more than about 1lb is excessive lighter styles such as an APA. Hopefully the more knowledgeable minds will chime in on this topic. Also, is that Irish Moss (not pete moss)?

    Kolsch recipe from Beer Captured?

    Has anyone tried this, its called Reissdorf Kolsch. Either that, or does anybody have a tried and true extract/grains Kolsch recipe. My second question would be, how does Kolsch yeast tolerate higher temps (65-68F)?

    Wow. In my limited experience with the party pig I should think that 1/3 cup would give more than ample carbonation. Hmmm....

    Guess I'll have to go crack one now. I guess it has been a month or so since I had one. Either way it's still beer, and I do like bananas!

    FYI, the banana taste doesn't really mellow with time. My Hef has been in bottles for 5 months, still tastes like I added a fifth of 99 bananas at bottling time!:ban: Think drinking a hefeweizen while chewing a piece of juicy fruit.

    The instructions included with my party pig said to add 1/4 to 1/3 cup of corn sugar. The first time I used it, I tried 1/3cup and it came out way too carbonated and I lost most the batch to foam. The next time I used 1/4cup and it come out just about right, if not a little too carbonated...

    I'll go ahead and field this one. ETOH is a commonly used (at least in the medical/health field and probably others) for ethyl alcohol. Therefore, ETOH-ics = alcoholics. :p
