    Pitching temperature

    I cool my partial boils to 80 degrees than dump into the primary, when I top up with about 2 more gallons of water the temperature lowers quite a bit more. My question is can I pitch ale yeast, smack pack or dry, at the lower temp or should I try to get the temp back up to just under 80? :confused:

    Too tall racking cane

    My racking cane sticks above the top of my carboy about 5 inches. It didn't siphon very well. Should I cut it so the crook of the cane is at the top of the carboy? Will it then work better. Thanks in advance.
