Alright, I am too interested in this now and since I have fresh cucumbers and jalapeno's in the garden, I am about to fire off 3 versions with just different yeasts in 1 gallon batches. I am testing 71b-1122, K1-V1116, and EC-1118...we shall see how they differ. :) Off to the garden I go...

I hear it is unlike beer in which pretty much nothing can live in the alcohol that can harm you. I think there are bacteria and things that are not so good in cheese...but I am a newb with cheese making, only made one farmhouse cheddar block before this debacle...so am hoping others more...

weird though...I swear it was more red than that (almost certain it looked more like my blueberry mead)...I just went to verify I pulled from the right box and unless I was drunk labeling two boxes...this is what my melo-meth looks like after a couple years...

My turned out AWESOME! However...it doesn't taste much like Rochefort 10...at all. :) Actually the beer it most closely resembles is Ommegang's Art of Darkness, which I like also so I am ok with it.

So I had this tested by turning off my water softener. Should I just brew it with water using the softener as I have been doing for a few months now anyways? There is no way my friends and I would buy that much water from the store as we do 40 gallons (between us) at a time and that would...
