Is that what this is called? Also, I assume this is now useless and needs to be thrown out? Not sure what happened, any ideas?

I gotta say, based on the thread title I didn't think this was about cheese.

I don't know anything about cheese making but why would you need to toss it?

I hear it is unlike beer in which pretty much nothing can live in the alcohol that can harm you. I think there are bacteria and things that are not so good in cheese...but I am a newb with cheese making, only made one farmhouse cheddar block before this debacle...so am hoping others more experienced can help me out...it would suck to lose 4 pounds of cheese and all that time, but not at the expense of my health...or my families!

I totally understand and based on that, I wouldn't chance it but again...not a cheese maker.
