Back sweeten Hard Cider

Want to use stevia to sweeten cider before bottling. Stevia is non fermenting right?

Yes, but... ick. Xylitol tastes better IMO.

Powder. You'll find it in health food / vitamin shops as a sugar substitute. It tastes exactly like sugar and leaves no aftertaste. Rather expensive, but I only use about 3 TBSP per gallon.

Re Stevia: Stevia is non-fermentable, but most powders available are watered down with another substance such as FOS or maltodextrin. You'll need to check the ingredients before using.

Re: Xylitol: If you have a dog, don't let it eat it. It's very toxic to them.
