I have found coconut water mead to be really good so here is a recipe

dissolve 800 grams of honey in 1 cup of boiling water then add it to 1.7 liters of coconut water to take it to nearly 2 liters. Add a wine yeast and ferment in a 2 liter bottle with an airlock. it ferments quite quickly as the coconut water has all the nutrients the yeast needs.

Rack it twice over a period of a few months age for 4 months and drink. It is really good!
 
Thank You for the inspiration, in India we get fresh coconut willtry this in my 3 gallon carboy and update you.
 
I'm interested if anyone else has tried this and if so, does the coconut flavor or aroma come through after fermentation?
