I'm just starting to brew lagers, have used the Saflager W-34/70. Was thinking of doing a Dortmunder Export-ish lager next and was wondering about people's recommendations or thoughts about the Danish Lager yeast, positive and negative.

@pjj2ba I saw in my searching of the forum that you use this strain, any tips or counsel for me?

I share a lagering fermentation chamber, so its set at 9.7 C and that's it, I can't adjust it up or down. After primary, I transfer to a keg and lager it in a keezer (off the gas) for a month.

I use Wyeast 2042 in my Dorts. I typically pitch at 48F and ferment at about 52F.

The only thing I would warn you of is the yeast smells like funky pork chops.

Danish lager is a good crisp dry lager yeast - good choice for a Dort. Seems like most lager yeasts smell like butt while fermenting, but the end beer is very clean.

2124 and 2042 are my 2 favorites right now.
