I need to brew a light session beer... and I have saison yeast, and its hot! so a saison it is. I have tons of catnip in my yard (its a mint), how much mint should I add to a 5.5G batch of 3.5% saison? and when should I do it?
 
I did a mint saison last year by adding 3oz of mint leaves (not sure what type of mint specifically, just whatever I could buy in the herb section of the grocery store) to a 5gal batch. This was in a 7+% abv beer and the mint was definitely noticeable but not too overpowering. I think I pasteurized the leaves but soaking them in 160F water for a few minutes then added that to the fermenter about a week before I bottled.

Not sure how this would translate to using catnip though...
