I have never used this yeast before, but I know that it has long lag time in the first generation. I had bought this yeast at least three months ago intindnding to use it, but forgot. I made a starter to check it out to see if it is still viable, and with a 36 hour lag time, is showing signs of life this morning.
I plan on using this when I brew this morning, but I noticed a VERY slight sour like odor when I sniffed it. I took a quick taste and noticed no vinegar notes or other off flavors (other than a yeasty, oxidised starter)
Just want to see if any one has any input on this yeast to calm any fears that I might be developing before I brew.
