So I have plans to try fermenting some generic V8 Splash. I only have about 3 quarts, so I don't want to use a 5+ gallon fermenter.
Can I just use a 1gal growler?
 
I'd say so, it leaves 1/4 of the fermenter in headspace. You don't expect a huge krausen, do you?
I often ferment a similar volume of leftover wort/beer in a 1 gallon jug, on the side.
 
You can use pretty much anything. I use 5 litre glass jars for a one gallon or so of wort to ferment. Of course if you grew up with out learning how to be scared of breaking glass, then I'd recommend some plastic fermenting vessels of the appropriate size.

1 gallon size containers for 3 quarts might be good unless you have a really good yeast activity stirring things up..... or Krausen.
