Hi.
How do i overcome the insane ammount of yeast? 50 packs without starter and 13 with a 10 gal starter....

I only brew lagers and use 3 dry packs for a 10 gal batch, and that works just fine.

Now i have a little bigger equipment, 55 gal, and want to use the mexican yeast. Do i need to brew a similar batch in my old smaller brewery to make a starter every time?

How does 3 dry packs for 10 gallons translate to 50 packs for 55 gallons?

(3 packs / 10 gallons ) * 55 gallons = 16.5 packs of yeast at your old pitching rate.

Yes mrmalty says 20 dry packs.
And 50 vials. 13 vials in a 9 gal starter.

I think its insane much yeast.
