I need a new kettle. I do 5gal batches and have used a 10gal Polarware in the past (boil starts with about 7gal). This doesn't leave much room for controlling boilovers so I thought I'd just go 15gal this time around. But then I noticed the Stout kettles and their taller (smaller-diameter) configurations so now I'm reconsidering the need for 15gal. Any opinions here? Not sure what the boil-off evaporation difference will be between the two.
