Hi, my wife and I have a farm share through a CSA and they are offering amaranth. They have grown it fresh. Does anyone know how I could use this to make beer? Is it very different from using other adjuncts? How would I need to prepare it for mashing, etc?

You could malt it or use it as an adjunct. I think the gelatinization temperature of amaranth is slightly below barley. It's a pretty small grain, so milling it is going to be a problem. You'll pretty much have to turn it into flour and then have trouble sparging.
