So I brewed a batch of the Beecave Heffe and used my new ferm chamber... Had a week plus of fermentation at 66-68.

Then I went away and I guess from the moisture in the chest freezer the temp probe came untaped from the side of the bucket and the reflectix I had around that also came undone.

So when I returned home the chamber was a bit warm and the buckets temp strip thermometer was reading about 78, not sure why since the stc1000 was reading around 20c...

I'm still going to bottle in hopes that since my primary fermentation was done it'll be OK, though it smells pretty banana'y

Am I screwed on this one?

I guess I learned I probably don't need the heat side going unless I'm stepping up from a low temp on like a lager I guess :)

Thanks for the quick response!!
