I'm thinking of doing an American Farmhouse a la Tank 7, and would like to try something other than Wyeast 3711, because I'd like it not to finish out so low. I have WLP400 on hand, and wondered if anyone else has used it in a Saison. Seems like the spicey/citrus of the yeast would compliment a Farmhouse/Saison with American hops.

I have not used it, but it'd be a fine yeast to use. Go for it. If you haven't noticed either people don't like to go out of the box on saison yeasts, or they don't post about it. You might get one of the drones in here saying in a slow automated like voice "only saison yeast is appropriate in a saison".
